Gulf Coast Blueberry Steaks


2 Filet Mignon
2 oz. brandy
4 tablespoons butter
1/2 cup blueberries
3 tablespoons cream
Salt and pepper to taste


Coat steaks with cinnamon on both sides.
In a skillet that has been heated to medium high, melt 2 tablespoons butter.
Place the steaks in the skillet and cook on each side for 6 minutes for medium, or until as done as you like.
If you need the other 2 tablespoons of butter, use them.
Add the blueberries and brandy and flame until the brandy is gone.
Remove the steaks and keep warm.
Blend in the cream and allow to thicken, stirring constantly to deglaze the pan.
Salt and pepper to taste and place on the steaks.

Serve at once.

Note: This dish is delicious with an avocado and tomato tossed salad with a well seasoned vinegarette and Gruyere potatoes. A fresh blueberry pie, chocolate lover’s blueberry pie, or blue and gold cake would finish the blueberry theme nicely.
